Adelaide is a tiny, newer operation, but we’ve heard hints and murmurs that founders Elizabeth and Chad Pollock have some impressively experienced guidance in the cellar. There’s a new-guard confidence to this. The nose is tangy, extracted, mouthwatering – like just-crushed red currants and black currants. There’s a little tobacco and tomato leaf and a whisper of minerals… fresh fresh fresh, as we said. All of this carries seamlessly into the palate, where a lovely green olive note runs under the pure, punchy-bright fruit and grippy tannin. Decant it for an hour if you want to bring out that caramel-mocha finish, and we think you do!
