Coming from Albert Hertz’s vineyards located on the edge of Eguisheim, this 100% Sylvaner is cultivated from 32-year-old vines. Hertz began sustainable cultivation in 1982, eliminating fertilizers and chemicals, and became certified biodynamic in 2007. The soils are a mix of sand, clay and limestone, imparting both richness from the clay and clean minerality from the limestone while notes of citrus, earth and smoke add to the dynamism of this medium-bodied white.
The grapes for this wine underwent a long pressing in whole clusters, before being fermented for four weeks in large oak barrels. Finally, the pressed juices were aged for seven months more in the same cask until bottling. At only 0.5 grams of residual sugar, this is a very dry and refereshing wine that pairs exceptionally with a variety of dishes, including seafood, white meats and sausage.
