La Jara, a family-run estate since 1891, is now operated by grandson Bruno Marion and great-grandsons Paolo and Massimo. Intervention is minimal because they believe that nature is its own perfect mechanism. Yields are kept low for maximum flavor, and only natural sugars are used to start the second fermentation. Slow, cool fermentations give the grapes time to let the inherent flavors shine.

Treviso is the epicenter of the most highly regarded region for Prosecco production. The soils here are composed of large limestone rocks that were deposited during a flood of the Piave River. These alluvial deposits impart a natural minerality and give more florality to the native Glera grape.

According to the rules of the Prosecco DOC, this wine is fermented twice. After the first fermentation, it's moved to a pressurized tank, where natural yeasts and sugar are added and bubbles start to form. The wine ages for 40 days before bottling. La Jara has won many awards for this beautiful floral, fruit-driven sparkling wine.

TASTING NOTES 

Fresh and mineral with soft white pear and lime blossom notes. Small fine bubbles make this a very refreshing wine.

PERFECT PAIRINGS

Serve as an aperitif. It's also perfect with salads, dips, fish, and seafood, as well as grilled vegetables.
