This is a wine that took us back in time. Specifically, to our pre-invino days when we were still conceptualizing what kinds of wines we'd scour the planet to share with our Members (before there were any). Something different; cool; and worth drinking. Something that makes for great conversation; something you'd want to drink again and again.
This Sparkling Sauvignon Blanc is all that and more. We found this a few years back while on a sourcing trip across Italy. It comes from a small family producer; the same one who has made an indelible impression on Barolo aficionados. Pure SB that shows a mouthwatering, frizzante-style, it has the most unique ability for satisfying a desire for crisp, tropical fruit and bubbles all at once. A wine to absolutely give a whirl. It makes a (great) impression.
Three things to know:
•Ideal Climate: With shade from the mountains in the mornings and warm summer nights, the grapes reach flavor maturity at their own pace. This slow, even ripening process allows the grapes to hold their tangerine, melon, Meyer lemon flavors as their sugar content creeps toward harvest-worthiness.
•Au Naturale: The wine is vibrant, clean and crisp, with a lingering sparkle in the mouth. The small delicate bubbles of this frizzante style wine enhance the citrus and gooseberry flavous.
•How do they create the bubbles? Carbon dioxide is a natural byproduct that occurs when yeast converts sugars to alcohol in the fermentation process. Once the yeasts have consumed all the sugars in the juice, a small amount of sugar and yeast is added to the wine before bottling to create a secondary fermentation, which produces the trademark effervescence we know and love.
Refreshing citrus flavors combine with vanilla and some oak to make for a delicious mouthfeel.
