The wine just hits your glass and screams Chablis… smoky gun-flint, pulverized oyster shells on the nose, followed by lemon cream, orange oil, and lemongrass on the palate – about as textbook as it gets. The wine is round, creamy, and accented with a barely-there note of butteriness, yet clean, bright, and focused from start to finish. The wine just oozes purity, with a defined sense of place and the teachable, hallmark notes of Chablis. Agnès and Didier Dauvissat’s 13-hectare property based in the village of Beine has attracted its share of critical praise since its inception in 1987. Despite it all, the wines remain under-the-radar, and the least famous among the myriad Dauvissat producers (at least for now!). This classic expression of Chablis hails from the Premier Cru plot of Beauroy, a south-facing vineyard composed of clay-limestone marl layered with marine sediments and fossilized oysters. The site, on the left bank of the Serein river, overlooks a small, man-made lake (Lac de Beine) that was built in the late 70s, so that grape growers could use the water to fight the typical spring frosts.
